How to choose an electric hob – criteria, tips and reviews, the best manufacturers

Answering the question of how to choose an electric hob is quite simple. Built-in tile-surfaces have long been classics, but in recent years a number of innovative technologies have appeared that make cooking as fast as possible and facilitate the management of these appliances. Flammable stoves with an open spiral and slowly heating cast-iron “pancakes” gradually became a thing of the past, they were replaced by more efficient and safe devices.

Their range is quite wide, and the cost is lower than that of induction. In addition, cookware made of any material can be used for cooking, which also reduces user costs.

Main criteria for choosing an electric hob

Type of burners

The type of burners is the first, albeit not the most obvious, criterion. As already mentioned, traditional cast iron and spiral burners are rarely used. Most modern devices are equipped with rapid, halogen and Hi-Light burners, with the latter being the most common.

Rapid burners are heated by a thick spiral (usually made of nichrome) that is placed above the surface. The heating of such burners is quite slow, and the power depends only on the size of the burner. Halogen burners are curved glass tubes, inside of which there is a gaseous substance and a refractory spiral. When an electric current is passed, the gas begins to glow and spreads infrared radiation, which transfers heat to the surface of the stove and the bottom of the dish. Such burners heat up and cool down very quickly, consuming a significant amount of electricity. Another disadvantage is their short service life.

Hi-Light burners are equipped with heating elements in the form of a long thin strip of tungsten, laid in a spiral under the glass-ceramic surface. The spiral is heated by the action of current, and then the heat is transferred to the surface and bottom of the dishes. A high heating rate is the advantage of this type of burners.

Expert tip: Hi-Light burners are economical, because they take much less time to reach the desired temperature when using them than for rapid ones, thanks to a much larger heating area.

Surface material

The material of manufacture for electric hobs for the home can be enameled and stainless steel, glass ceramics and tempered glass. Hobs with cast-iron or rapid burners are made from enamelled and stainless steel. Enamel, in addition to a fairly low cost, is good because it can be painted in a variety of colors. However, it is fragile – it is easily scratched and chipped. Glossy or brushed stainless steel is durable and resistant to mechanical and thermal influences, besides, it is quite easy to clean.

Glass-ceramic is most often used to make electric hobs, even though this material is somewhat more expensive. It is available in several shades, is highly durable and has a long service life. Poor thermal conductivity in the horizontal and good in the vertical contributes to a high heating rate and safe use. Tempered glass is a spectacular, expensive material. Its advantage is cracking in case of severe mechanical damage, excluding the occurrence of sharp fragments.

Dimensions and number of burners

The dimensions and number of heating zones are determined by the size of the kitchen, the composition of the family and the eating habits adopted in it. The hobs with 4 burners are still the most popular. Their width is about 60 cm, which makes it easy to mount them in a standard countertop. However, experience shows that one or even two burners can be used very rarely. In such cases, it makes sense to purchase an electric hob with three or even two heating zones 45 or 30 cm wide.

There are also models with one burner. These can be either inexpensive table tiles that are convenient to transport, for example, from home to the country house, or premium grill or teppan devices for cooking without dishes – these are purchased in addition to a conventional hob. It makes sense to buy devices with a width of more than 60 cm with an increased number of burners from 5 to 8 in a spacious kitchen for a large family, where they are used to cooking a lot.

Control

The control system for electric hobs can be anything – from mechanical with rotary switches to touch with buttons or sliders and a display. The touch control panel guarantees a smooth surface without protrusions, easier cleaning and more intuitive operation thanks to the display and indicators such as residual heat.

Power

The power of the hobs is an important criterion: the higher it is, the less time will be spent on heating the burner and cooking the dish.

The total capacity of the slab is the sum of the capacities of the individual zones. For a standard four-burner surface, it averages from 5 to 6.5 kW. For them, a dedicated grounded outlet is sufficient. Large hobs from 7 to 10 kW require that the wiring is fairly new and reliable. Cooktops of lower power – up to 4 kW – can have two or three heating zones. As standard, the hob is equipped with one powerful burner, two standard burners and one low power burner. The heating power for each zone is not adjusted smoothly, but in steps: most often the number of steps reaches 9. Most models are equipped with variable power burners with expansion zones – they can cook in dishes of different diameters.

Expert Tip: Connecting an electric hob must be done with a separate circuit breaker and RCD (residual current device). It is strictly forbidden to use the power supply line of the hob to connect several appliances.

Color

The color of the hob does not affect its working qualities, however, it can also serve as a significant selection factor. The most common color for electrical surfaces is black. This universal color is suitable for any kitchen design, but is quite easily soiled. Another classic shade – white – is also available from most manufacturers: it looks very elegant, and drops and crumbs are less noticeable on a white background. They differ not only in appearance, but also in body materials, types of heating and, of course, price. Let’s break it down together and discuss the pros and cons of each position.

But what is the best hob in the end: induction or simple electric? There are so many conflicting reviews on the Internet, and sellers in stores sometimes do not know this themselves. We asked several experts who sell hobs, what are their types, how they are fundamentally different, and what is better to buy. Here’s what they told us.

Today we will talk about induction and simple electric stoves, traditional with cast-iron “pancakes”, as well as the most modern ones.

The material is extensive and before you decide to buy, you should carefully delve into the question, since each of the types has many nuances that you simply must know about.

Induction or electric?

So, first of all, we need to decide which of the main types of hobs is better: just electric or with an induction mechanism? This question is common, but not entirely correct.

The fact is that the induction cooker is also electric. But the technology of its device is very different from the traditional ones, therefore, they are distinguished into a separate group.

How does an induction hob work?

If in a conventional panel, even the most expensive one, the heating of the surface comes from some heating element that is heated by the current, then the induction system is fundamentally different.

There is a coil through which an alternating current passes and a magnetic field is generated.

It remains absolutely cold until you put a pan with a magnetic bottom on it, and then, according to the laws of physics, it starts to induce a current between these two surfaces, heating up the material as a result.

This stove is very convenient and safe if there are small children in the house. You can press the power buttons as much as you like, but the hob will not warm up and the child will not get burned.

But, in our country, they are not as common as usual, because the price for them is very “biting”. And it’s not just about the price. There are also myths around induction cookers…

However, this is not surprising: new products are always met with caution.

So what are these myths that hinder sales?

  1. 1 First, people are afraid of the harmful effects of the magnetic field on the body. For some reason, it seems to them that in such a stove it is simply huge!

    But in fact, the harm from the mobile phone that we use every day is much greater. And it’s not worth talking about microwaves. The radiation in the induction panel is so negligible that it is in no way capable of harming health.

  2. The only thing for people with pacemakers (a device that is sewn into the chest to regulate the work of the heart) is not to purchase such a technique, since they (pacemakers) react sharply to the slightest fluctuations of electromagnetic waves. But in fairness, it is generally contraindicated for such people to be near almost any technique.

  3. 2 The second myth: you need special dishes that cost a lot of money.

    But in fact, absolutely any one with a flat (not convex or vice versa) bottom that is magnetized is suitable! Both stainless steel and plain enamelled. The only thing is that it won’t work to use aluminum utensils, but it’s not needed for nothing, by and large.

  • Electricity consumption of induction cookers is also about 1.5 times less than that of conventional cookers

And now let’s look at all this from the other side and slightly spoil the advertising strategy on which the promotion of this product is based.

  • Cooking speed is good, of course, it seems. But you’re not used to it! And while you adapt, you have to throw a lot of spoiled dishes in the trash. Moreover, almost everyone is used to a certain time period in the cooking process.

    For example, while the broth is cooking, you peel and chop vegetables for borscht. And now you need to prepare everything in advance, and there will be problems with the time of sequential bookmarking. But, this property is the lesser of evils: in the end, they get used to everything

  • The second plus, that is, less electricity consumption, is completely crossed out by the fact that the induction cooker is not capable of constant and uniform heating.   • Well, the third “plus” about security is very doubtful. Show us at least one person who stubbornly burns himself, touching the burners of an electric stove with his bare hands?

  • are not economical, they draw a lot of electricity;
  • troublesome to care for;
  • over time, pancakes become unusable and need to be changed.

But glass-ceramic ones can be turned off, and they will cool down, albeit not as lightning fast as induction ones, but also very quickly.

Depending on the type of heating, they are:

  • Rapid (regular spirals, heating time 10-12 seconds)
  • Halogen (warm-up with halogen lamps, 1-2 seconds, but they often burn out)
  • Hi-Lite (heater bands, asbestos base, warm-up time 5-7 seconds)

As for the choice of the type of heating, our advice is ordinary (rapid) spirals. They do not burn out very often and their replacement will cost less than other consumables.

And one more plus of this option: a large selection. Indeed, spiral panels have been on the market for a long time and almost all eminent manufacturers produce them.

Some people are afraid to take modern glass-ceramic hobs because they are afraid of breaking them. But the alarm is in vain, because they are very durable.

They have one weakness: the fear of pinpoint strikes. If you drop the knife from a great height and it hits the surface hard, it could theoretically crack.

But in practice, such cases are extremely rare and most buyers who have such equipment are very pleased with the choice.

What additional features should I look for when buying a hob?

In addition to types and types, it is necessary to pay close attention to the range of functions that hobs are equipped with.

Sometimes the price is too high because the model has a lot of innovative extras that you won’t need at all. And there are very useful things, without which comfort will not be the same.

Control buttons – are touch-sensitive and in the form of rotary knobs. It is better to give preference to the first, since such a panel is easier to clean.

Wait or stop timer – by pressing this button you can move away from the boiling soup for a while (heating will stop). In our opinion, a completely ridiculous function. Nothing prevents you from simply turning off the pan or rearranging it to another burner.

The dish ready timer is a very useful thing and you should not take the stove without it. This is convenient: you set the time and you will no longer forget about the boiling dish.
Locking the touch panel from turning on – if you have small children in the house, then do not save on this security measure.

Cookware detection sensor on the burner – if you put an empty container or forget to put something on the stove and turn on the burner, it will work: it will beep. Glass ceramics “does not like” to idle and deteriorate from this, therefore, this function is quite useful.

The warranty period is, in general, the first thing you need to pay attention to when buying. If the warranty is 3 months, then you should not take the equipment, no matter how affordable the price may seem. The better the product, the longer the warranty.

Recipe memory – memorizes the cooking modes of various dishes. Completely unnecessary function, in our subjective opinion. Even if the dish is the same, the products may be different.
